“Wine is one of the most civilised things in the world and one of the most natural things of the world that has been brought to the greatest perfection, and it offers a greater range for enjoyment and appreciation than, possibly, any other purely sensory thing.”
Ernest Hemingway
There is simply no other thing in life that better embodies the pleasures of dining with its sense of well-being, conviviality, sharing and sensory delights all in one delicious package. Some say that a meal without wine is a day without sun. That certainly is true when enjoying delicacies of a fine dining nature!
For many years, our table d’hôtes dinners were accompanied with a generic Cahors red, a reasonable ‘assemblage’ dry white wine or a country rosé, whichsoever was desired was served in a simple carafe per couple. It was true-to-terroir and of course, paired well with the spirit of French gastronomy. However, as our cooking became more assured (having begun to discover the varied local suppliers with their vital sources of ingredients we had hunted for), so our culinary bar was raised.
Feeling that the time was right, following so many gastronomic compliments passed by our happy clientele, we began the task of assembling a wine list that would complement the many varied dishes that we serve at la Métairie des Songes. Being past restaurateurs, we couldn’t resist the challenge!
We list red wines from our region of Cahors by several renowned growers, showcasing the Malbec grape to its deep and ‘inky’ best. Much careful research has been channelled into tasting and buying red wines from our neighbouring regions of Bordeaux and the Dordogne, selecting from the best vintages available. Dry, medium and sweet white wines are gathered within Occitanie and close neighbouring regions.
